Fourteen rooms facing the cathedral dome
Hotel Olom opened in June 2023 at Plaza de la Catedral 9, directly opposite Cádiz Cathedral on the edge of El Pópulo. Where many old-town stays turn inward around a quiet courtyard, Olom puts its best asset on the facade: front windows and balconies look straight at the cathedral dome from the bed. The scale is small, with 14 rooms and 27 beds, Each room is individually designed and themed with home automation.
Owned by Mexican proprietors, the hotel doubles as a working gallery for Gaditano and Andalusian craftspeople. Lamps, paintings, tableware and cutlery on display around the house are for sale, alongside a small gourmet shop corner stocked with artisan preserves, honeys and soaps. Beyond the rooms, the building fits in a massage service, an intimate cinema room, art exhibitions and pet-friendly details.
Three dining and drinking spaces under one roof
Gastronomic direction at Hotel Olom is led by chef Luis Callealta, with Álvaro Vela running the kitchen day to day. Rather than a single hotel dining room, the food and drink programme splits across three distinct spaces, plus a made-to-order brunch service:
| Venue | Setting | Focus | Price Guide |
|---|---|---|---|
| Ettu | Ground-floor dining room and interior patio | Contemporary Cádiz produce with brief Mexican nods (opened July 2023) | €50–60 a la carte; €45 tasting menu (4 courses + 2 desserts, drinks excluded) |
| Momento | Street-level terrace on Plaza de la Catedral | Casual Gaditano sharing plates, from croquetas and ensaladilla to tuna tartare and payoyo cheese pizza with chicharrones | €20–25 average per person |
| Aleph | Rooftop cocktail bar by the saltwater pool | Signature liquid cuisine (such as the Sea sour with tequila, samphire and trout roe, or the Torrija with brandy and Pedro Ximénez) plus alcohol-free mixes | €10–14 per cocktail |
| Brunch | Indoor breakfast room and patio | Sweet and savoury dishes cooked to order, including varied toasts and eggs Benedict with chicharrones | €15 for two dishes per person |
At Ettu, provincial craft shows up on the table before the food arrives: water is poured from a stylised clay botijo made by a ceramicist in Arcos de la Frontera, cutlery comes wrapped in Ubrique leather, house-made butters arrive in porcelain pots alongside lechín olive oil from Olvera, and bread comes from Dani Ramos at La Cremita in Chiclana.
The rooftop pool and practical details
Up on the roof, the saltwater pool and Aleph cocktail bar sit barely 30 metres from the cathedral, close enough that the bell towers fill the skyline while you swim or order a drink. Downstairs, the Roman ruins at the Roman Theatre are a short walk through the cathedral quarter.
The hotel's reception telephone is +34 956 29 11 42. Neither the municipal tourism listing nor the gastronomic press states fixed room tariffs or standard check-in and check-out hours, as nightly rates fluctuate by date; contact reception directly to confirm room availability and arrival times. If you prefer a traditional 18th-century merchant mansion on a quieter inward street over a square-facing address with a busy terrace and cocktail rooftop, compare Hotel Argantonio before booking.
